While the Donkey is synonymous with the Democratic Party, the Democrats have never made it their official party symbol but use it on a lot of their material. Why is the Donkey a Symbol of the Democratic Party?

The Democrats see the donkey as a strong, dignified, and intelligent animal who reflects their ideologies. On the other hand, the Republicans whose party symbol is an elephant abhor the Democrats’ symbol. They regard it as silly, stubborn, and ridiculous.

To date, the elephant remains the official symbol of the Republican Party, and although the Democrats have yet to declare their own, you wouldn't need to walk more than a couple paces at one of their rallies before spotting a donkey.

While the bald eagle is a national symbol for the United States, the two major political parties that govern it are often represented by two different animals: a donkey for the Democratic Party and an elephant for the Republican Party. These animals are commonly linked with these two parties in everything from political analysis to bumper stickers.
