Avidin is a tetrameric biotin-binding protein produced in the oviducts of birds, reptiles and amphibians and deposited in the whites of their eggs. Dimeric members of the avidin family are also found in some bacteria. In chicken egg white, avidin makes up approximately 0.05% of total protein

Avidin was discovered by Esmond Emerson Snell (1914–2003). This discovery began with the observation that chicks on a diet of raw egg white were deficient in biotin, despite availability of the vitamin in their diet. It was

What is the function of avidin in eggs?
Functional avidin is found only in raw egg, as the biotin affinity of the protein is destroyed by cooking. The natural function of avidin in eggs is not known, although it has been postulated to be made in the oviduct as a bacterial growth inhibitor, by binding biotin helpful for bacterial growth.

    What is streptavidin and avidin?
Streptavidin. Streptavidin is not the only protein capable of binding to biotin with high affinity. Avidin is the other most notable biotin-binding protein. Originally isolated from egg yolk, avidin only has 30% sequence identity to streptavidin, but almost identical secondary, tertiary and quaternary structure.

One egg contains about 3.6 g egg white protein (according to the USDA food database). According to the Wikipedia article on egg white, 0.05% of that is avidin, that is 1.8 mg per egg. If one ingests 300 micrograms (the RDA, I know there are institutions which recommend only 150 micrograms per day) of biotin, that is 1.23 micromoles.

Biotin, also called vitamin B 7, is one of the B vitamins. It is involved in a wide range of metabolic processes, both in humans and in other organisms, primarily related to the utilization of fats, carbohydrates, and amino acids. The name biotin derives from the Greek word “bios” (to live) and the suffix “-in” (a general chemical suffix used in organic chemistry).
