Avidin ist ein Glykoprotein im Eiklar von Vogeleiern, welches Biotin (Vitamin B7) binden kann. Die biologische Funktion von Avidin ist nicht näher bekannt. Es wird jedoch vermutet, dass das Avidin im Eiklar einen Abwehrmechanismus darstellt und inhibitorisch auf das Bakterienwachstum wirkt. Im Hühnerei macht es etwa 0,05 Prozent des Eiklar-Proteins aus.
