    蔗糖是一個葡萄糖分子和通過糖苷鍵連接果糖分子組成的雙糖。結構:α-D-吡喃葡糖基 - (1→2)-β-D-呋喃果糖苷。葡萄糖是α-苷鍵果糖是β-苷鍵。葡萄糖具有六元吡喃環狀結構,果糖是呋喃環狀結構。屬於非還原性糖,而麥芽糖、乳糖之所以具有還原性,是因為其具有半縮醛羥基。蔗糖不存在變旋現象,且無無差向異構反應。
